Method
  • Heat a griddle pan.
  • Sear fruit cut side down until caramelised.
  • Drizzle with melted chocolate, scatter with almonds and garnish with mint leaves.
  • Serve with ice cream.

 

Grilling Pointers:

  • Make sure your griddle or grid is clean before use, because the old burnt bits will taint the flavour of the food and, contrary to popular belief, won't burn off.
  • Always lightly oil the food you're going to grill to prevent it from sticking to the braai grid.
  • Heat the griddle or braai grid well before you sear your food to create a well caramelised crust and fresh-off-the-fire griddle lines.
  • To impart great flavour to meat while it cooks, skewer it with stalks of fresh hardy herbs, such as rosemary and bay.
