The salmon provides a great source of the healthy omega 3 fatty acids. Look for lemony ponzu sauce in the Asian food section.

Method
  • Reserve 1 Tbsp (15ml) sesame seeds and dip fish in remaining seeds. Mix ponzu and lime juice and peel, reserved sesame seeds and 1½ Tbsp (23ml) olive oil together and set aside.
  • Heat remaining oil in a pan and fry fillets for 2-3 minutes on each side or until just cooked through and still a little pink in the centre. Remove from heat.
  • Pour dressing over fish.
  • Cook vegetables and noodles according to packet instructions. Serve with fish.

 

More good ideas

  • Serve with steamed rice instead of noodles.
  • Roast fish if you prefer.
