Shrimp and vegetable spring rolls

Ideal as a starter served with sweet chilli sauce, or as a light lunch served with Asian baby leaf salad and sweet soy sauce.

Method
  • Heat a glug of oil in a wok
  • Add paste and cook for 30 seconds
  • Toss in vegetables, soy sauce, salad onions and shrimps
  • Stir-fry until vegetables are tender but crunchy and soy sauce has evaporated
  • Add sesame seeds and allow mixture to cool
  • Place a generous dollop of filling on the corner of each spring roll wrapper and fold according to packet instructions
  • Heat 4cm oil in a saucepan
  • Fry spring rolls until crisp and golden all over. Drain on kitchen paper.
  • Serve with Asian salad leaves and sweet chilli sauce for dipping
