Method
  • Place the lentils, onion, tomato, coconut milk, chillies, salt and spices into a pot.
  • Bring to the boil, reduce heat, cover and simmer until lentils are soft and mushy. Add water if needs be, about a table spoon at a time if it gets too dry.
  • In the meantime heat oil in a small frying pan. Add seeds and when the mustard begins to pop stir in the onion and curry leaves.  Cook over a very low heat until golden and sticky. It should take about 30 – 40 minutes.
  • Serve dal topped with the tarka - (onion and spice mixture)
