If you have a fan-cooling oven, switch it off at the wall socket to prevent it from cooling too quickly.

Method
  • Preheat oven to maximum setting (about 260-270ºC).
  • Place sirloin in a roasting pan.
  • Mix paste, herbs, seasoning and olive oil together and rub all over sirloin.
  • Roast sirloin for 5 minutes for every 500g (eg: 2kg =20 minutes).
  • Turn oven off and leave meat in oven for 60 minutes for rare, 80 for medium rare and 120 for well done.
  • Remove and allow meat to rest for 10 -15 minutes before carving.


Cook’s tip

  • These are guidelines only. Ovens vary, so if you have a powerful one, cook meat for a little less time and if you have a large oven, it loses heat quicker, so you'll need to cook the sirloin for longer.
