Method
  • Make an indirect fire
  • Over the stove, heat the oil in a heavy pan or pot
  • Brown the lamb shanks in the hot oil and transfer to a foil tray for the fire
  • Add the bacon pieces to the pot and fry until all the fat has rendered. Spoon over the lambshanks
  • Fry the onions and garlic in the bacon fat until soft 
  • Add the wine, tomatoes, sugar, rosemary, seasoning and mustard and bring to the boil 
  • Wrap a large piece of tinfoil around the entire tray, and seal loosely.
  • Place on the braai grid.
  • Cook for at least 1 hour, checking regularly, add a little water if needed

Roasted Vegetables

  • Prepare a indirect fire.
  • Pour some olive oil and vegetable spices with the mixed country vegetables.
  • Cook over indirect fire for 30 minutes.
