Method
  • Preheat oven to 140˚C.
  • Place all ingredients in a deep baking dish and cover with a tight-fitting lid.
  • Bake for 3 hours. 
  • Turn lamb and bake for another 2 hours.
  • Remove lid, increase temperature to 180˚C and bake for 30 minutes or until lamb has browned.
  • Remove lamb from baking dish and keep warm.
  • Pour pan juices over a large bowl of ice and quickly remove ice and solidified fat with a slotted spoon.
  • Place pan juices into a small saucepan and bring to the boil.
  • Serve lamb with hot pan juices.
