Method
  • Pour the wood chips into a bowl, add the lemon juice, white wine, garlic and water and soak the wood chips, overnight if possible. 
  • Prepare an indirect fire.
  • Drain the wood chips, removing all excess water. Reserve the water.
  • Place the wood chips directly onto the burning coals, which will create the smoulder. 
  • Place the braai grid above the coals and place the chicken in the centre of the Weber.
  • Place the reserved water in a heat proof bowl and place on the grid.
  • Cover with the lid, making sure that the air vents are closed, and cook for 1 hour 15 minutes.
     

Potato bake

  • Fry the onions, mushrooms and garlic in olive oil.
  • In an ovenproof dish or flat-bottomed pot, layer the sliced potato with the fried mushroom mix.
  • Combine the cream, milk and onion soup and mix well.
  • Pour the cream mixture over the layered potatoes.
  • Bake on the grill over a slow fire for 35 minute.
