Method

Cook rice according to packet instructions. Drain and set aside.
Heat oil in a non-stick pan.
Fry garlic until soft. Add lemon juice, stock, broccoli florets, parsley and cherry tomatoes.
Cook for about 6 - 7 minutes, or until tomato skins have split and broccoli is tender.
Season with milled pepper.
Add spinach, mackerel and rice.
Toss to combine and serve.
