Method
  • Preheat oven to 180°C
  • Heat a glug of oil in a pan and fry onion and brinjal until soft and starting to brown.
  • Add garlic and fry for a further minute
  • Add tomatoes, wine, oregano, sugar and cinnamon
  • Season and simmer for 10-15 minutes or until liquid has reduced and sauce has thickened. Allow to cool.
  • Unroll pastry and cut into a square
  • Brush 4 sheets of pastry with oil and sandwich them together
  • Top with ample filling and a few mozzarella slices
  • Brush edges with beaten egg, bring corners together and crimp with fingers to seal.
  • Repeat with remaining pastry and filling
  • Brush each parcel with more oil and bake for 15-20 minutes or until crispy and golden.
  • Serve with a side salad
