Method
  • Preheat oven to 200˚C
  • Line a greased 27cm quiche dish or tin with pastry and cover with baking paper. Top with beans, lentils or rice and bake for 10 minutes (this is known as ‘blind baking’).
  • Remove paper and beans
  • Heat a glug of oil in a pan and fry leeks until soft
  • Scatter pastry with snoek, cheese and leeks
  • Beat together eggs, milk, sour cream and mustard. Season with pepper and (sparingly) with salt.
  • Pour the egg mixture over the snoek, cheese and
    leeks
  • Bake at 180˚C for 30-40 minutes or until set and golden brown
  • Serve with salad greens

Hints

  • Replace snoek with 200g cooked bacon, ham or smoked beef
  • To prevent spilling, pour half the milk and cream mix over the quiche then place in the oven and top up with remaining mix
  • Cut the fat by using milk without cream
