Method
  • Brush the fish with oil, on the skin and inside the cavity.
  • Season lightly and sprinkle the cavity with the turmeric and paprika.
  • Fill the cavity with the herbs and wrap the fish in foil, dull side outwards.
  • On your Weber braai, prepare an indirect fire placing a drip pan inbetween the coals.
  • Lay the fish on the grate above the drip pan and cook for 30 minutes. The fish should be half cooked by this point.
  • Gently open the foil and fold it around the fish.
  • Drain the smoking chips and combine with the remaining ingredients, spinkle over both sides of the fire.
  • Cover with the lid and close the top air vents, allow to cook for another 30 minutes until only just cooked, the fish will continue to cook while cooling down.
     

Chef’s tip: if you are using a gas braai, you can use a smoker box which you can make by filling a tin foil tub with the wood chips and poking a few holes in the bottom and the lid. Soak in water for 30 minutes. 

Roasted vegetables:

  • Place vegetables in foil pan.
  • Add oil, water, spice and crumbed feta.
  • Place on cooking grate with the fish.
  • The smoking chips will give a distinct smokey taste to the vegetables.
