Method
  • Drain and flake fish, removing as many bones as possible.
  • Add remaining ingredients and season to taste.
  • Divide mixture into 16 palmsized patties and chill to set for 30 minutes.
  • Shallow-fry patties in mediumhot oil for 5 minutes or until
  • golden on one side.
  • Turn carefully and repeat on the other side.
  • Drain on kitchen paper.

Mayonnaise:

  • Mix egg yolks, lemon juice, salt, pepper and garlic together.
  • Add oil in a thin stream while continuously beating with a whisk.
  • Stop stirring when a glossy, thick mayonnaise has formed.
  • Toss salad ingredients together.
  • Serve fishcakes with mayonnaise and salad.
