Method
  • Heat a glug of oil and fry onion until soft.
  • Move onion to side of pan, add a little more oil and add garlic, ginger and whole spices.
  • Cook until spices begin to pop, then mix through onion.
  • Toss in rice and stir-fry for a few minutes until well coated in oil.
  • Add curry powder and water and simmer, uncovered, until all water has been absorbed.
  • Remove from heat, cover with a lid and allow to stand for 10 minutes.
  • Fluff rice with a fork and toss through tomatoes, spinach and snoek. 
  • Cover until spinach has wilted.
  • Halve eggs and dot over rice.
  • Scatter with coriander and almonds and serve.
