Method
  • Whisk egg yolks and cream with half the parmesan.
  • Season and set aside.
  • Cook spaghetti according to packet instructions.
  • While pasta is cooking fry bacon, mushrooms and garlic.
  • Drain pasta, reserving a little of the boiling liquid.
  • Toss pasta in pan with mushrooms and bacon.
  • Remove pan from heat and add reserved cooking water and creamy egg sauce.
  • Stir quickly but don’t cook any further or you’ll scramble the eggs.
  • Scatter with remaining parmesan.

 

More good ideas

  • Replace the bacon with chopped ham or chorizo, or any other spicy sausage that’s available.
  • Toss with chopped parsley and basil.
  • Add a handful of cherry tomatoes.
