Method
  • Cook pasta according to packet instructions and drain, reserving 1 cup (250ml) cooking water.
  • Heat oil in a large pan and fry garlic and chilli for a minute.
  • Add clams and toss until they open.
  • Toss in parsley and add cooked pasta and reserved water.
  • Cook for a few more minutes, tossing continuously until water and oil emulsify to form a sauce that coats pasta.
  • Season and serve immediately.
