Method
  • Pre-heat the oven to 180ºC and grease a baking tray with a little butter
  • Pour about 2 centimetres of water into pot and place the pot over medium heat until the water begins to steam
  • Place the spinach in a colander or sieve that can fit on top of the pot, cover the colander/sieve with the pot lid and steam the spinach until it has wilted
  • Remove the colander/sieve from the pot and cool the spinach by running cold water over it
  • Once cooled gently press out all the moisture with your hands and chop the spinach finely
  • Heat the oil in a frying pan over a medium heat
  • Add the onions and garlic and sauté until soft
  • Add the nutmeg and spinach and combine
  • Transfer mixture to a bowl and add the feta and parsley
  • Cut each pastry sheet lengthwise into three equal strips
  • Brush each strip with olive oil or melted butter
  • Place a tablespoonful of the spinach and feta filling at the top of each pastry strip
  • Fold one corner towards the other side to cover the filling, thus forming a triangle.
  • Continue the folding pattern to maintain a triangular shape, brush the end of the strip with olive oil and press against the triangle to seal
  • Repeat with the remaining pastry and filling. Brush the tops with melted butter and sprinkle sesame seeds over the top.
  • Place the spinach and feta triangles on the greased baking tray and bake for 15-20 minutes or until golden brown
  • Serve warm
