Spanish potato tortilla squares with fresh tomato salsa

Make in advance and serve at room temperature.

Method
  • Heat 4cm oil in a saucepan and fry potatoes until they just begin to soften. Remove and drain on kitchen paper.
  • Heat a glug of oil in a non-stick pan and fry onion and garlic until soft. Mix in potatoes and parsley. Season.
  • Pour over eggs and cook until set
  • Cover pan with a plate and flip tortilla onto plate
  • Slide tortilla, uncooked side down, into pan and cook until golden. Set aside to cool before slicing.


Tomato salsa

  • Mix salsa ingredients together with a glug of olive oil. Season and serve with tortillas.
