Method
  • Heat butter in a pan and stir-fry marinara mix for about 3-4 minutes or until cooked. Remove from pan and set aside.
  • Heat oil in the pan and fry onion until soft.
  • Add garlic, cumin and paprika and fry for a further minute.
  • Toss in tomatoes, rice and chicken stock.
  • Mix together and allow to simmer for 20 minutes or until rice is tender.
  • Stir marinara mix and frozen peas into the rice mixture, and cook for a further 2-3 minutes.
  • Season, sprinkle with parsley and serve.
