Spiced butternut soup with fresh coriander

A perfect winter warmer, crammed full of fibre and beta-carotene! To keep the fat content low, garnish with low-fat evaporated milk.

Method
  • Preheat oven to 220°C.
  • Toss the onions, butternut and apple with the olive oil. Spread in a single layer on a baking sheet and roast for 30 minutes or until veggies are soft.
  • Remove from the oven and toss with flour, curry powder, cumin and nutmeg until vegetables are well coated.
  • Heat water in a large saucepan. Add chicken stock, milk, orange zest and juice and the roasted vegetables. Simmer for 15 - 25 minutes, then blitz with a handheld blender until smooth. Adjust seasoning if necessary.
  • Serve soup with fresh coriander and butternut vegetable crisps.
