Method
  • Preheat oven to 200°C
  • Place fish on a baking tray and season
  • Mix crust ingredients together, season and cover with boiling water. Stir briefly, cover with a plate and rest for 5 minutes.
  • Fluff couscous with a fork
  • Top each fillet with couscous. Press down to create a crust
  • Drizzle with olive oil and bake for 10-12 minutes, until tender

  • Add your choice of spices, herbs and nuts to create the crust
