Method

Ostrich tartare

  • Dice the fillet into 2mm pieces (don’t use a food processor)
  • Mix with the other ingredients, except for the lettuce, and season to taste
  • Spoon into butter lettuce cups
  • Serve with preserved lemon and date atchar


Preserved lemon and date atchar

  • Dice lemon rind finely
  • Cover mango in hot water and rehydrate for 30 minutes; drain
  • Roughly chop the mango and dates and mix with the lemon rind and remaining ingredients


Good idea:

  • This dish is also excellent served on bruschetta
