To prevent burning, soak skewers in water for at least 20 minutes before use.

Method
  • Thread pork, apricots and onions onto skewers
  • Combine marinade ingredients, pour over kebabs and allow to marinate for at least 1 hour.
  • Wrap aubergine in foil and cook over medium coals (or in a 180C oven), turning often, until soft (25-35 minutes).
  • Cook kebabs over medium coals, turning, until cooked through (10-15 minutes). Allow to rest for 5 minutes.
  • Halve aubergine, remove skin. Mix flesh with lemon juice, olive oil, garlic, cumin and mint and mash with a fork.
  • Serve kebabs with wraps, aubergine ‘mash’ and coriander
