Method
  • Season steak and rub with oil.
  • Heat a griddle pan over a high heat.
  • Chargrill steak for 2-3 minutes on each side. 
  • Rest for 5 minutes, then slice as finely as possible.
  • Heat beef stock, curry paste, fish sauce and lime juice in a saucepan and bring to the boil.
  • Add chopped coriander stalks and vegetables to broth.
  • Cook for 3-4 minutes or until vegetables are just tender.
  • Remove from heat and add half the coriander leaves. 
  • Adjust seasoning if necessary.
  • Divide broth between bowls. 
  • Top with seared beef, bean sprouts, chilli and remaining coriander leaves.
