Method
  • Preheat oven to 180˚C.
  • Slice each chicken breast on the diagonal into 3 medallions.
  • Toss chicken with oil, spices andseasoning. Set aside to marinate.

 

Sweet potato fritters:

  • Place sweet potatoes on a baking tray and roast for about an hour or until cooked through.
  • Once cooled, scoop sweet potato flesh into a bowl and mash with potatoes.
  • Add remaining ingredients (except oil) and season. 
  • Shape spoonfuls of mixture into balls and flatten to about 1cm thickness .
  • Heat ½ cm oil in a frying pan and fry fritters for 2-3 minutes on each side until dark golden brown and cooked through.
  • Keep warm in oven until serving.
  • Heat a non-stick pan and fry chicken in batches for 5 minutes a side or until cooked through.
  • Toss chicken with herbs and serve with sweet potato fritters.
