Spicy chicken with minted barley and pea salad

Crispy, healthy and delicious, pearled barley makes a brilliant side dish.

Method
  • Preheat oven to 200°C.
  • Cut a few slits into each chicken piece with a sharp knife.
  • Combine olive oil, lemon juice, garlic, paprika and chilli and rub over chicken, stuffing slits with mixture.
  • Marinate for 1 hour.
  • Place barley and stock into a saucepan and bring to the boil.
  • Cover, reduce heat and simmer for 20 minutes or until liquid has been absorbed.
  • Remove from heat and set aside for a few minutes.
  • Toss with remaining ingredients and a little olive oil.
  • Season and set aside.
  • Place chicken in a roasting dish, season and cook for 35-40 minutes or until chicken is cooked through and skin is crispy.
  • Serve chicken warm with barley salad and chopped spring onion.
