Spicy Durban lamb curry with Indian salad

Method
  • Preheat oven to 160°C
  • Season lamb and toss in flour
  • Heat a glug of oil in an ovenproof saucepan and brown meat in batches
  • Remove and set aside. Drain excess oil from pan. 
  • Blitz onion, garlic and ginger to form a paste. Add a generous glug of oil to pan and fry paste until it turns golden.
  • Add spices, curry powder and leaves. Fry for another minute.
  • Add tomato purée and sugar and simmer for a few minutes until sauce thickens slightly
  • Return meat to pan, season and mix well to coat in sauce
  • Add potatoes and enough water to cover all ingredients
  • Cover and bake (adding more water if necessary) for 1½ - 2 hours or until meat is tender
  • Toss salad ingredients together and serve with curry, rice, naans or rotis
