Method
  • Heat oil in a saucepan 
  • Sauté onion until soft and add garlic, carrots and spices
  • Cook for about 8-10 minutes
  • Add lentils and stock and  simmer for 25-30 minutes
  • Blend three quarters of  the mixture until smooth  and stir through the rest
  • Season and serve with  a dollop of yoghurt,  chopped coriander, nachos, naan or hot  buttered toast to dunk


Great idea:

  • Replace carrots with diced butternut or sweet potato and adjust cooking  time accordingly
