Spicy pilaf with soft-boiled eggs

A simple weeknight supper, suitable for vegetarians. Lentils are a great source of fibre and they have a low Glycemic Index.

Method
  • Place lentils and water in a saucepan and simmer for 20 minutes or until lentils are tender. Drain, set aside.
  • Heat a splash of oil in a deep saucepan and sauté leeks until soft. Add garlic and spices. Fry for another minute.
  • Stir through rice and season. Cover with stock; simmer until rice is cooked and liquid absorbed. Stir through peas, cover and leave for 5 minutes.
  • Boil eggs to your liking, 4-5 minutes for soft-boiled and 1-2 minutes longer for hard. Peel and halve.
  • Fluff rice with a fork and stir through lentils, lemon juice and coriander
  • Serve pilaf topped with eggs and scattered with coriander

Hints

  • Find garam masala and mustard seeds in Pick n Pay’s spice section
  • For a Middle Eastern flavour replace lentils with chickpeas and add raisins to the rice before serving
