Method

For serving:

  • Greek yoghurt
  • PnP rotis
  • Sliced red onion and cucumber
  • Fresh mint and coriander

Marinade:

  • Combine marinade ingredients.

Roast:

  • Place lamb in a large dish and pour over marinade. Leave to marinate for at least 1 hour for flavours to develop.
  • Remove lamb from marinade and wipe off any excess yoghurt. Place lamb into a roasting pan, drizzle with olive oil and season.
  • Roast for 20 minutes or until browned.
  • Reduce oven temperature to 160˚C, add onions and wine or stock, cover with foil, and cook for another 2½- 3 hours, or until meat is tender and cooked to your liking.
  • Serve with Greek yoghurt, warm rotis, salad and herbs.
