Tomatoes are a great souce of the anti-oxidant lycopene. You can lower the GI of the recipe by using wholewheat pasta. The brinjals can be replaced with courgettes or roasted vegetables.

Method
  • Cook pasta according to packet instructions
  • Drain and set aside
  • Heat oil in a pan and fry onion until soft
  • Add garlic and fry for another minute
  • Add brinjal and sauté for a further 10 minutes
  • Add chilli, tomatoes and tomato paste and simmer covered over a low heat for another 10 minutes.
  • Season, dollop sauce over pasta and serve sprinkled with feta.
