Method
  • Makes 8, serves 4
  • Preheat oven to 200°C
  • Mix the first eight ingredients together
  • Lightly brush a sheet of phyllo with butter and place another sheet on top. Repeat with remaining two pastry sheets and cut each sheet into four rectangles
  • Top each square with a dollop of spinach mixture
  • Roll squares into cigar shapes, tucking in the sides as you go
  • Place on a greased baking tray, brush with butter and bake for 20 minutes, or until crisp and golden
  • Mix tzatziki ingredients together
  • Season and serve with spanakopita
