Spinach and watercress roulade with spring onion cream cheese

The spinach, cheese and onion give this roulade an incredible taste. The spinach boasts a fabulous vitamin A content.

Method
  • Pre-heat the oven to 200ºC
  • Grease a Swiss roll tin, line with baking paper and sprinkle with half of the parmesan
  • Mix together the spinach and half of the watercress and eggs, season and pour into the tin. Bake for 7 – 8 minutes until the eggs have set. Remove from the oven and leave to cool for 5 minutes.
  • Sprinkle with the remaining parmesan. Lay a sheet of baking paper over the top and set aside until cool.
  • Combine the cream cheese, milk, the rest of the watercress, onions and seasoning
  • Turn the roulade onto a chopping board. Peel the baking paper off the base and spread the filling over the base.
  • Roll up from the short end, discarding any paper as you go.  Refrigerate for 30 minutes and serve in slices
