Spinach is a rich source of vitamin A. Add chopped tomato and a little chilli when frying the onions, for even more flavour!

Method

Heat the oil in a pan and fry the onion and garlic until soft.

Add spinach, beans, lemon juice and a pinch of pepper, and fry for about 5 minutes or until cooked through.

Serve with brown rice.
