Method
  • Heat a glug of oil in a large saucepan and sauté spring onions.
  • Add stock and bring to the boil. Reduce heat and simmer for 5 minutes.
  • Add baby marrows, peas, celery, cabbage and tortellini and cook for a further 10 minutes or until pasta is al dente (tender with a bit of bite) and vegetables are tender but not mushy.
  • Stir through herbs and Swiss chard and remove from heat.
  • Adjust seasoning and serve scattered with parmesan and drizzled with pesto.
