Method

Crêpes

  • Place flour and salt into a bowl.
  • Add coconut milk, water and eggs.
  • Whisk until smooth.
  • Stir through spring onions. 
  • Allow to stand for 30 minutes.
  • Lightly grease and heat a small non-stick pan.
  • Fry quarter cupfuls of mixture until golden on both sides.


Patties

  • Mix all ingredients together and divide into 8-12 sections.
  • Shape into ovals.
  • Char-grill or fry patties until cooked through.
  • Serve patties with crêpes, butter lettuce, coriander leaves and bean sprouts.


More good ideas

  • Use only prawns or only chicken mince if you prefer.
  • Shape mince mixture around lemongrass stalks and cook over the coals.
