Method
  • Heat a glug of oil in a medium-sized saucepan
  • Fry spring onions, garlic and ginger until soft
  • Add all remaining ingredients, except mint, and simmer for 10 minutes
  • Stir through mint, season and serve


Good ideas

  • Add a can of chopped tomatoes to the broth
  • For a meatier broth, add some chopped bacon or sliced smoked sausages, like Russians
