Method

For the marinade:

  • Make the marinade by lightly whisking together all of the marinade ingredients.
  • Place the meat in a shallow dish and pour over the marinade mixture and cover with clingfilm.
  • Stand for at least 4 hours, turning from time to time.


For the guacamole:

  • Scoop out the flesh of the avocado
  • Add the onion, chillies, coriander and lemon juice and mash ingredients together.
  • Season with salt and pepper


For the salsa:

  • Mix all ingredients together in a mixing bowl


To assemble:

  • Prepare a direct fire and fit the cooking grill allowing it to heat up for a few minutes.
  • Fry the onions until browned, remove and set aside.
  • Fry the steak until cooked to your liking, set aside and allow to rest for 5 minutes.
  • Carve the meat thinly across the grain
  • Combine the sliced meat with onions 
  • Fill the tortillas with the meat and onion, guacamole and salsa.


For a vegetarian option, replace the rump steak with roasted brinjal and green and yellow peppers sliced into strips.
