Steak frites with Café de Paris sauce

The world-renowned restaurant, Café De Paris, serves steak and chips with the top-secret Café de Paris sauce, first concocted in the 1930s by Madame Boubier.

Method

Steak

  • Preheat a heavy-based pan over high heat
  • Rub steaks with olive oil, salt and pepper
  • Sear steaks for 3 to 4 minutes a side, or until well browned. Set aside.


Sauce

  • Reduce heat and add a dollop of butter to the pan. Sauté onion until soft.
  • Add sherry and scrape bottom of pan with a wooden spoon to loosen any burnt bits
  • Toss fish, herbs and mustard together. Add remaining butter gradually, whisking continuously, until a sauce forms. Season.
  • Serve steaks with sauce, chips and salad


Average cooking time per side for a 2.5 - 3cm thick steak

  • Medium rare: 3 to 4 minutes
  • Medium: 4 to 5 minutes
  • Well done: 6 minutes or more
