Method

Ginger beer basics:

  • Make sure you have enough bottles with well-sealing screwtops (corks will shoot out once the ginger beer starts brewing).
  • Wash bottles in hot, soapy water.
  • Rinse and sterilise by soaking in plenty of boiling water.
  • You’ll need a large, sterilised plastic bucket for brewing.
  • Keep a sieve and funnel handy for easy straining and decanting.
  • Store ginger beer in an area where spills won’t spoil any surfaces – sometimes lids don’t seal properly and ginger beer seeps out.


Step 1:

  • Mix yeast and ginger with a few tablespoonfuls sugar and 1 cup (250ml) lukewarm water.
  • Leave to stand for 30 minutes to become frothy.
  • Mix remaining sugar and water in a large bucket or container.
  • Add yeast mixture and mix well.


Step 2:

  • Add raisins, cover with a tea towel and allow to stand for 24 hours.


Step 3:

  • Strain mixture through a fine sieve. Reserve raisins.
  • Decant into sterilised bottles.
  • Drop 3-4 raisins into each bottle and seal.
  • Leave to ferment for at least 10 days before drinking.
