Method
  • Preheat oven to 150°C.
  • Pat pork dry with paper towel and season well.
  • Line two roasting pans with foil.
  • Place apples, onion and garlic in one with pork on top.
  • Cover base of pan with water, wrap in foil and braise for 3 hours.
  • Reduce oven to 140°C, cook for a further hour, then remove pork from heat and place on second pan. 
  • Reserve braising liquid with apples, onion and garlic.
  • Pull skin off belly and place on a roasting rack in a baking tray.
  • Combine all basting sauce ingredients and baste pork well.
  • Increase oven to 220°C. 
  • Roast pork and crackling for 15 minutes. 
  • If crackling doesn’t crisp, grill it for 5 minutes more.
  • Strain fat from braising liquid.
  • Mash onion, apple and garlic into braising liquid, return to heat and reduce for 5 minutes.
  • Strain and serve with pork.
