Method
  • Heat oil in a pan and fry onion until golden. 
  • Add garlic, cumin, chilli and mustard seeds and fry until fragrant.
  • Add spinach and cook until wilted. Season well.
  • Halve each quarter of paneer to make squares.
  • Spread spoonfuls of filling mixture between paneer squares.
  • Dip each paneer sandwich in flour, then in egg and finally in breadcrumbs. Set aside.
  • Heat a glug of oil in a saucepan and fry onion until soft.
  • Add remaining sauce ingredients and simmer until thickened. Season.
  • Heat 2cm oil in a large saucepan and fry crumbed paneer until golden.
  • Fry or microwave poppadums, then serve with paneer, sauce and fresh coriander.
