Method
  • Ask the fishmonger to remove the back bone as well as the small bones attached to back bone. Score skin of fish with a knife to avoid curling of meat
  • Stuff the trout with the cooled pilaf and tie closed with string
  • Make sure the fire is not too hot,
  • Melt the butter, chop capers and mix with lemon juice, salt and pepper and olive oil, mix all together and brush on fish. Place on the braai grid.
  • The fish should be flaky when cooked, no longer then 10 min turning every 2min
