Method
  • Preheat oven to 220°C and place rack in the centre.
  • Sift flour and salt into a bowl.
  • Whisk eggs, ¼ cup (60ml) xylitol, coconut milk and vanilla essence together.
  • Add flour and continue to whisk until batter is completely smooth.
  • Mix remaining xylitol and berries together and spoon into a greased 23cm ovenproof dish.
  • Pour batter over berries and bake for about 20 minutes or until puffed up and golden around the edges.
  • Serve with whipped nondairy cream (or vanilla yoghurt for those who aren't lactose-intolerant).

 

More good ideas

  • Use a drained can of apricots. 
  • Replace xylitol with castor sugar. 
  • Use PnP frozen berries when fresh ones are out of season.
