Method
  • Dust fish with cornflour.
  • Heat oil in a wok over a high heat and deep-fry fish until cooked through and golden. 
  • Remove and drain on kitchen towel.
  • Mix cornflour with a little water in a separate bowl and set aside.
  • Bring remaining sauce ingredients to the boil over a medium heat. 
  • Add cornflour mixture, stirring until thickened, then pour over fish.
  • Fry garnish ingredients in a little oil, scatter over fish and serve.
