Sweet potato curry

Spice up midweek meals with this delicious, yet healthy curry loaded with vitamins and fibre. Make it suitable for vegetarians by using vegetable stock.

Method
  • Heat oil in a large non-stick saucepan. Sauté onion, garlic, ginger and curry paste for 3-5  minutes.
  • Add sweet potatoes and stir to combine flavours
  • Add tomatoes, lemon juice and stock and simmer for about 15-20 minutes
  • Season and add cauliflower and a little extra stock if necessary. Cook for an extra 10-15 minutes or until vegetables are tender. 
  • Serve with a dollop of yoghurt, naan breads and chopped coriander
