Method

Tomato smoor

  • Heat oil in a non-stick pan and sauté onion until soft
  • Add paste and cook for a minute
  • Add tomatoes, sugar, chilli powder and red wine vinegar and simmer for 15-20 minutes or until thickened to a chutneylike consistency
  • Stir through parsley. Season.


Tamales

  • Mix tamale ingredients together to form a batter
  • Cut corn husks or greaseproof paper into rectangles
  • Place a spoonful of batter onto each piece of husk/paper
  • Roll into a cracker shape and tie each end with string
  • Steam for 20-25 minutes, carefully remove and serve with tomato smoor
