Method
  • Mix all the pickled cucumber ingredients together and marinate for at least 30 minutes (or overnight).
  • Mix marinade ingredients together and toss with chicken.
  • Thread chicken onto skewers and season.
  • Heat a griddle pan and grill skewers until cooked through and slightly charred. Allow to rest for 5 minutes.
  • Serve with pickled cucumbers, PnP rotis, yoghurt and chutney.


More good ideas

  • Replace the chicken with pork, lamb or vegetables,  like baby marrows, mushrooms and brinjals.
  • Serve the kebabs with basmati rice cooked with a few cardamom pods.
