Tarte au tomate avec basilic et gruyère

Tomato, basil and gruyère tartlets are the perfect starter, these can be made with parmesan cheese if you can't find gruyère.

Method
  • Preheat oven to 200˚C.
  • Cut a cross in the bottom of each tomato and place in a bowl of boiling water for a minute. 
  • Remove and place in chilled water. Once cool enough to handle, pull off the tomato skins.
  • Halve each tomato (through the stem area) and scrape out seeds. Set seedless tomato halves aside.
  • Lightly roll out pastry and cut into 6 x 10 cm squares.
  • Place pastry squares on a greased baking tray and gently score a 1cm border around the edge of each. 
  • Be careful not to cut through the pastry.
  • Place a heaped tablespoon of gruyère in the centre of each square, leaving border clear.
  • Top with basil and half a tomato, cut-side down.
  • Brush border with egg wash and bake for 15 minutes at 200˚C, then reduce heat to 180˚C and bake for another 20 minutes or until puffed and golden.
  • Whisk together vinaigrette ingredients and season to taste.
  • Garnish tartlets with fresh basil leaves and serve with herb salad.
