Method

HONEY ROOIBOS AND THYME FLOAT

  • Combine tea, boiling water and sugar.
  • Add thyme and orange, if using.
  • Infuse for 15 minutes.
  • Adjust sweetness to taste if desired.
  • Discard tea bags, thyme and orange, and refrigerate until completely cold.
  • Divide tea between four tall glasses and top with sparkling water.
  • Serve with one to two scoops of ice cream per glass. 

BERRY FLOAT

  • Follow the same steps as the rooibos float, leaving out thyme and orange.
  • Top with fresh or frozen berries.
